Healthy Dinner Ideas For A Hectic Schedule

A friend posted a question on Facebook that raised my eyebrow, “What are some quick and easy school night dinner ideas?” Being curious as to what the long list of answers were, I started to read the comments. Although, she didn’t ask for “healthy and quick” meals, I was still a little shocked by the answers some people gave. I read a ton of comments with the words frozen, cream cheese, tv dinners, grilled cheese, pizza, etc.

I wanted to share with you some easy and healthy dinner ideas I have to help make your life a little simpler. Also, if you find yourself super busy, I would love for you to feel fueled and ready to tackle any schedule that awaits you. My husband or myself cooks dinner almost every night and we never spend more than 20-30 minutes on any given dish- unless it is stewing in the crock-pot all day without me having to pay much attention to it. Gotta love the crock-pot!

Crock Pot Salsa Chicken- This dish literally calls for two ingredients- salsa and chicken. However, I do jush it up a little and add corn and beans to it. You can do so much with this dish. Add it on top of rice, eat it as is, put it on salad, in tortillas, etc. But the best part- throw in a couple ingredients and walk away for 4-8 hours. It will be done when you come home and are ready to eat!

One Pot Turkey Chili- I make this all the time (especially in the fall and winter). One of our favs for sure! I play around with the ingredients all the time. If you click the link the blogger offers a ton of suggestions. Again, throw all the ingredients into one pot and call it a day.

Honey Mustard Chicken Wraps- This is great to have when you notice that your fridge is getting bare, but have some left over chicken and veggies you need to use up. I just dab some honey mustard dressing on the chicken, place in a tortilla, toss in some fresh veggies and you are ready to feast!

Buddha Bowls- This link shows you step by step instructions on how to make the best Buddha bowls. I am noticing more kids are turning vegetarian these days and wanted to offer something for them as well (or you if your eating falls under that category)! They are fool proof and I like to make these when my fridge is going bare as well. I find odd concoctions, but somehow it all works nicely together. An easy one is quinoa cooked in chicken broth with broccoli, and roasted chickpeas sprinkled on top for some quality crunch.

Healthy Loaded Baked Potato Recipes- This link provides 17 baked potato recipes that are hearty and healthy. Some are more geared towards adults and some for kids. Pick and choose what fits your needs! The best part is that you can precook your potatoes on the weekend to make your work/school week that much easier.
