Now that summer has come to an end and we are transitioning into the school year, I wanted to share some yummy (and healthy!) fall lunch ideas for your kiddo or yourself. If you are interested in dinner ideas for a hectic schedule, scroll back a few weeks for that Success Secret!
Luckily you can make large batches of the first two on a Sunday and have them ready for the week. And the last two are so quick to whip up you can make them on the fly.
1. Cranberry Pecan Chicken Salad (made with olive oil mayo)- put them in lettuce boats or on toast. Click on the link for the recipe:
2. Roasted Fig and Kale Salad with pomegranate dressing: What a simple yet fancy and filling lunchtime salad. Sign me up. This gets me right in the mood for fall weather.
3. Apple Peanut Butter and Granola Wraps: Um, who doesn't like to channel their inner child and eat a kid-like lunch?! I certainly do and eat this often actually. It is so good. Also, perfect for your actual kids ;)
4. Pumpkin Spice Smoothie (I am excited for the new shakeology flavor to come out today!)
For almost any Shakeology flavor, I love adding in one frozen banana, one cup of almond milk and a packet or scoop of shakeo. Blend and it is delish! Check out these stats compared to a Starbucks sugary Pumpkin Spiced Latte!
